New restaurant alert! Amaryllis, located at 225a Westminster Street in downtown Providence, is opening in early June! 

Co-owners Tracy DeFusco and Deanna Marandola formed Amaryllis with a pop-up model in 2018, knowing that one day they wanted to open a brick-and-mortar restaurant. After three years of establishing their menu, hosting events, and sharing their culinary creations, the pair have decided to put down roots in downtown Providence. Amaryllis will open its doors for dinner in early June in the cozy location once home to the popular Flan y Ajo and Sushi Yama.

DeFusco and Marandola met while working as bartenders at Rosalina and Kleos, sister restaurants located in downtown Providence. While both are originally from Providence and have spent many years in the local hospitality industry, Amaryllis’ various inspirations come by way of West Coast and global flavors, including Japanese, Indian, Spanish, and Italian influences. The name “Amaryllis” pays tribute to their own Italian-American roots. 

The menu at Amaryllis will focus on “clean and vibrant food that emphasizes health and happiness,” the co-owners said, sourcing from local farmers and growers, and using organic and seasonal ingredients, whenever possible. On the rotating menu guests might see a miso ginger rice noodle bowl or stuffed roasted eggplant plus weekly seasonal fruit tarts. 

“We’re excited to bring our unique style to Downcity, and to be opening during the beginning of the summer season downtown,” DeFusco and Marandola said. “We are creating a space that is whimsical and hip, without being pretentious.” 

They’re also looking forward to potential collaborations with other local businesses in the area. As has been customary for this location, the restaurant will be BYOB, with a focus on creative mocktails and the option to add liquor or wine pairings through neighboring Eno Fine Wines & Spirits. There will also be kombucha on tap and assorted herbal teas. 

Amaryllis will be open Wednesday - Friday, 4 p.m. - 10 p.m., and Saturday 12 p.m. - 10 p.m., with plans for both indoor and outdoor dining, weather permitting.
